Instructions
Warm olive oil in a large pot over medium heat.
Add onions; sauté until soft, about 5 minutes.
Stir in remaining ingredients. Bring to a boil over medium-high heat. Cover, reduce heat to medium-low, and simmer for 15-20 minutes. Cook until rice is fluffy and liquid absorbed.
