Slow-Simmered Beef Curry
750 gbeef chuck cut into chunks(Meat)
3 tbspOlive Oil(Pantry)
1Onion chopped(Produce)
4Garlic cloves crushed(Produce)
1Ginger grated(Produce)
1 Tspground cinnamon(Spices)
1 Tbspground coriander(Herbs & Spices)
2 tspground cumin(Herbs & Spices)
1 tspground turmeric(Herbs & Spices)
Fresh coriander small bunch chopped(Herbs & Spices)
400 mlcoconut milk(Pantry)Serve with
Instructions
Brown beef in batches with 2 tbsp oil. Transfer to the slow cooker.
In the same pan, gently fry the onion in remaining oil until soft. Add garlic and ginger; cook for 1 minute.
Stir in all spices; fry for 1 minute until fragrant. Pour in coconut milk; bring to a simmer. Add this mixture to the slow cooker.
Cook for 4 hours on high, or 8 hours on low. Stir in fresh coriander before serving.
